Baked Chicken Taquitos

Ingredients:

3 cups chicken, cooked and shredded

6 oz. cream cheese, softened

1/3 cup sour cream

1/2 cup salsa

1 1/2 cups colby jack cheese

1 1/2 cups baby spinach, chopped, and stems removed

salt and pepper, to taste

1 tsp. chili powder

1/2 tsp. garlic powder

1/2 tsp. ground cumin

12 6-inch flour tortillas

Directions:

1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. Set aside.

2. In a large bowl mix together the chicken, sour cream, salsa, cheese, and spinach. Season with the salt, pepper, chili powder, garlic powder, and cumin. Mix until fully combined. 

3. Take tortillas and spread a few tablespoons of the chicken and cream cheese mixture to the center of the tortilla and spread out. Roll them up and place seam side down onto prepared baking sheet. Spray the tops with cooking spray. 

4. Bake for 15-20 minutes or until edges are golden brown. Serve warm and enjoy.
