BBQ Chicken Nachos

Ingredients:

2 cups shredded rotisserie chicken

salt and pepper, to taste

cayenne pepper, to taste

1/3 cup barbecue sauce

1/2 cup pepper jack cheese, shredded

1/2 cup colby jack cheese, shredded

1/2 cup corn

1/2 cup black beans, drained and rinsed

corn tortilla chips

Directions:

1. Preheat oven to 350F.

2. Season shredded chicken with salt, pepper, and cayenne pepper.

3. Toss chicken in barbecue sauce to coat well.

4. In a 9x13 jelly roll pan, create a layer of tortilla chips and top with the chicken, corn, black beans, and shredded cheese.

5. Cook for 5-10 minutes or until cheese is completely melted.

6. Drizzle with barbecue sauce. Serve warm with optional sour cream.
