Creamy Pesto Gnocchi

Ingredients:

1 container grape tomatoes

1 tbs olive oil

1/4 cup pesto

1 cup heavy whipping cream

1/4 cup chicken broth

2 cloves garlic, minced

1 lb uncooked potato gnocchi

1/2 cup grated parmesan cheese

salt and pepper, to taste

Directions:

1. Heat up a large pan with olive oil over medium heat and add the container of grape tomatoes. Once slightly blistered, add pesto, heavy cream, chicken broth, and garlic.

2. Once the sauce starts to gently bubble, stir in the gnocchi. Cook for 5 minutes while stirring occasionally. 

3. Once the sauce is thickened, add the parmesan cheese. If the sauce gets too thick add a splash of broth or cream. Season with salt and pepper and serve immediately.
