German Schnitzel

Ingredients:

1 lb. lean pork loin boneless chops

salt and pepper

1/2 cup flour

2 eggs

1 cup plain breadcrumbs

vegetable oil for frying

Directions:

1. Lay pork chops on a cutting board and cover with plastic wrap. Pound meat with the flat side of a meat tenderizer until 1/4 inch thick. Lightly season both sides with salt and pepper.

2. Place flour, eggs, and breadcrumbs into 3 separate shallow bowls. 

3. Pour vegetable oil in a large skillet till the bottom is completely covered. Turn heat to medium or medium-high.

3. Dip each side of the pork chop into the flour, shake off excess. Next, dip into eggs and then breadcrumbs on all sides and shake off excess.

4. Once oil is hot enough, fry the schnitzel for 3 minutes on one side and 2.5 minutes after flipping. Set on a paper towel to soak up excess oil. Serve with brown gravy (optional) and lemons (optional).
