Lemon Blueberry Loaf

Ingredients:

For the loaf:

2 cups all-purpose flour

1 cup sugar

1 1/2 tsp. baking powder

1/2 tsp. salt

zest of 1 lemon, divided

1/2-3/4 cup blueberries

1/2 cup sour cream

1/2 cup water

1/3 cup butter, melted

1/4 cup lemon juice

For the glaze:

1/2-3/4 cup powdered sugar

lemon juice

lemon zest

Directions:

1. Preheat oven to 350 degrees. 

2. In a large bowl, whisk together flour, sugar, baking powder, salt, and half of the lemon zest. Gently stir in blueberries.

3. In a separate bowl, whisk together sour cream, water, melted butter, and lemon juice until smooth. Add to dry ingredients and mix until combined. 

4. Transfer to greased loaf pan and bake for 50-60 minutes and let rest for 30 minutes before pouring on glaze.

For the glaze:

1. Combine powdered sugar, the rest of the lemon zest, and enough lemon juice to make a semi-thick pourable consistency. Pour over loaf once it has cooled for 30 minutes.
