Roasted Carrots

Ingredients:

6-8 carrots

3 tbsp. avocado oil

kosher or sea salt and freshly ground black pepper, to taste

Directions:

1. Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper and set aside.

2. Peel and wash carrots. Slice carrots diagonally in 1/2-inch-thick slices. Toss in a bowl with oil, salt, and pepper.

3. Transfer to sheet pan in 1 layer and roast in the oven for 20 minutes until tender.
