Roasted Potatoes

Ingredients:

1 lb. baby gold potatoes

2 tbsp. avocado oil, or enough to coat potatoes

kosher or sea salt and freshly ground black pepper, to taste

Directions:

1. Preheat oven to 400 degrees. Prepare a large baking sheet with parchment paper and set aside

2. Wash, dry, and halve the potatoes.

3. Toss potatoes in a large bowl with oil, salt, and pepper.

4. Lay flat on prepared baking sheet and roast for 15-20 minutes or until golden and fork tender.
