Smoked Sausage with Potatoes and Green Beans

Ingredients:

For the Green Beans

2 tbs. olive oil

1/2 tsp. red pepper flakes

1 12 oz. bag frozen green beans (fine or uncut)

3 cloves garlic, minced

1/2 tsp. salt

 

For the Potatoes

1 lb. petite red potatoes, cut into bite size pieces

1 tbs. butter

1 tbs. olive oil

salt and pepper, to taste

For the Smoked Sausage

1 tbs. olive oil

1 14 oz. package smoked sausage, sliced into bit size pieces

1 tsp. Italian seasoning

1 tsp. dried oregano

2 cloves garlic, minced

1/4 cup chicken broth

Directions:

For the Green Beans

1. Cook green beans in microwave according to package directions.

2. Heat 2 tbs. olive oil in large skillet over medium heat.

3. Add the red pepper flakes and stir around to coat with the oil.

4. Add green beans; cook, stirring often, for about 6 minutes.

5. Stir in garlic and salt, and cook for 15 seconds.

6. Remove green beans from skillet; cover and set aside.

7. Wipe down skillet to use for potatoes and sausage

For the Potatoes

1. Cut potatoes into 8 pieces and warm in microwave for 8 minutes to cook

2. Heat butter and olive oil in the same skillet over medium heat.

3. Add prepared potatoes to the heated skillet and season with salt and pepper and cook for 10-12 minutes, or until golden. Stir frequently.

4. Remove potatoes from skillet; cover and set aside.

For the Smoked Sausage

1. In the same skillet, heat up 1 tbs. olive oil.

2.Add the sliced sausages and cook over medium heat for 5 minutes.

3. Season with Italian seasoning and oregano.

4. Stir in garlic, and continue to cook for 20 seconds.

5. Deglaze with the chicken broth and stir around to coat.

 

Return prepared green beans and prepared potatoes back to the skillet with the smoked sausage and cook for a couple of minutes, or until everything is heated through. Enjoy.
